When you're trying to fuel up for a big race ahead complex carbohydrates are a must for keeping your energy levels up! Lucky this week's Local Roots CSA is hooking you up with sweet potatoes. Sweet Potatoes are loaded with natural sugars, lots of fiber, potassium, manganese, and vitamin A. They're a great way to carb up either before or after a race, especially when combined good fats, like coconut oil. The medium chain fatty acids found in coconut oil pack a mega punch! Together these two work great to boost energy and increase endurance, whether your marathon is on the streets of New York or on the couch in front of Twin Peaks ;)
